Turkish ŞEkerpare Syrup Cookies
Ingredients
- 125 grams butter
- 1 tea cup vegetable oil
- 2 eggs
- 1 tea cup powdered sugar
- 1 tea cup semolina
- 1 packet vanilla
- 1 packet baking powder
- 1 lemon zest
- 3.5 cups flour (add gradually)
Syrup
- 2.5 cups sugar
- 2.5 cups water
- 2-3 drops lemon juice
Preparation
First, prepare the syrup by boiling the sugar, water, and lemon juice for 5 minutes, then set aside to cool.
In a bowl, mix the softened butter, eggs, vegetable oil, powdered sugar, and semolina.
Add the lemon zest, vanilla, and baking powder, and stir well.
Gradually add flour until a soft dough forms; adjust based on measuring cup size to ensure the dough is not too firm.
Shape the dough into small pieces and place them on a greased baking tray.
Brush the tops with the reserved egg yolk and score with a fork if desired.
Bake in a preheated oven at 180°C until golden brown.
Pour the cooled syrup over the hot baked cookies.
Decorate as desired and allow to rest before serving.
Tips
Ensure the dough is soft to allow proper syrup absorption; if too firm, it may not soak well.
