Crispy Turkish ŞEkerpare Pastry

Ingredients

  • 125 g butter or margarine
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup desiccated coconut
  • 2 eggs
  • 1/2 cup semolina
  • 1 packet baking powder
  • 1 packet vanilla
  • 3 to 3.5 cups flour
  • 1 teaspoon molasses

Syrup

  • 2.5 cups sugar
  • 3 cups water
  • 1 slice lemon

Preparation

  1. First, prepare the syrup by boiling the sugar, water, and lemon slice for at least 15 minutes, then set aside to cool.

  2. For the dough, mix room temperature butter, eggs, vegetable oil, and sugar until combined.

  3. Add desiccated coconut, semolina, baking powder, and vanilla, and mix well.

  4. Gradually add flour and knead until a smooth dough forms.

  5. Shape the dough into pieces and place on a baking tray.

  6. Brush the tops with a mixture of egg yolk and a teaspoon of molasses.

  7. Make indentations on top with a knife.

  8. Bake in a preheated oven at 175°C until golden brown.

  9. Once baked and hot, pour the cold syrup over the pastries.

  10. Let rest for 1-2 hours before serving.
