Turkish Revani Semolina Cake

Ingredients

  • 4 eggs at room temperature
  • Slightly less than 1 cup sugar (can be reduced to 1/2 cup if less sweet preferred)
  • 1 cup vegetable oil
  • 1 cup semolina
  • 1 cup yogurt at room temperature
  • 1.5 cups flour
  • 1 packet vanilla
  • 1 packet baking powder
  • Zest of 1 orange

Syrup

  • 3.5 cups sugar
  • 4 cups water
  • 1 thin slice lemon

Preparation

  1. First, prepare the syrup by combining sugar, water, and a thin slice of lemon in a pot, bring to a boil, and simmer for 15 minutes, then remove from heat and let it cool completely.

  2. In a mixing bowl, beat the eggs, sugar, and vanilla with a mixer on high speed for 5-6 minutes until light and creamy.

  3. Continue beating and add the yogurt, oil, and semolina.

  4. Fold in the orange zest, flour, and baking powder with a brief mix.

  5. Pour the batter into a greased baking dish.

  6. Preheat the oven to 180°C and bake on the lower rack for 40-45 minutes until golden brown, without opening the oven for the first 30 minutes.

  7. Remove the cake from the oven and let it cool slightly.

  8. Pour the cold syrup over the warm cake and let it absorb for 2-3 hours.

  9. Slice and serve.

  2. Use the lower rack in the oven for even cooking, especially with baking dishes.
