Walnut and Orange Revani
Ingredients
- 4 eggs
- 1 cup flour
- 1 cup semolina
- 1 cup granulated sugar
- 1 cup vegetable oil
- 1 cup yogurt
- 1 teacup finely ground walnuts
- Zest of 1 small orange
- 1 packet baking powder
- 1 teaspoon baking soda
- 1 packet vanilla
Syrup
- 2.5 cups granulated sugar
- 3 cups water
- 1 coffee cup orange juice
- Lemon juice
Preparation
Whip the eggs with sugar until creamy.
Add oil and yogurt and continue whipping.
Add orange zest, semolina, flour, and vanilla and mix for another 5 minutes with a mixer.
Add baking powder, baking soda, and walnuts, gently mix and pour into a greased baking dish. Bake in a preheated oven at 160-170°C until a toothpick comes out clean.
Syrup
Combine 2.5 cups sugar, 3 cups water, and 1 coffee cup orange juice in a pot and bring to a boil.
After it starts boiling, add a little lemon juice and cook on high heat until thickened, about 15 minutes.
Assembly
Pour the lukewarm syrup over the cold cake.
Let it rest for at least 2 hours.
Garnish with walnuts, pistachios, hazelnuts, or clotted cream and serve.
Tips
Bake in a 25cm springform pan to ensure the cake rises properly. Avoid using larger pans.
