Malaysian Steamed Rice Cake
Ingredients
- 1 cup wheat flour
- 1 cup rice flour
- 1 cup sugar (reduce if less sweetness desired)
- 1 cup cold cooked rice
- 1 cup water
- 1 packet instant yeast
- Grated coconut, to serve
Preparation
Blend the sugar, cold rice, and water until smooth and fine.
Pour the blended mixture into the wheat flour, rice flour, and yeast; mix well.
Stir until evenly combined.
Transfer to a covered container and let it rest for 1 hour.
After resting, stir the mixture, divide into portions, and add food coloring if desired.
Steam in greased small molds for 8-10 minutes or in a large mold for 20 minutes.
Serving suggestions
Serve with grated young coconut for enhanced flavor.
