Malaysian Steamed Rice Cake

Ingredients

  • 1 cup wheat flour
  • 1 cup rice flour
  • 1 cup sugar (reduce if less sweetness desired)
  • 1 cup cold cooked rice
  • 1 cup water
  • 1 packet instant yeast
  • Grated coconut, to serve

Preparation

  1. Blend the sugar, cold rice, and water until smooth and fine.

  2. Pour the blended mixture into the wheat flour, rice flour, and yeast; mix well.

  3. Stir until evenly combined.

  4. Transfer to a covered container and let it rest for 1 hour.

  5. After resting, stir the mixture, divide into portions, and add food coloring if desired.

  6. Steam in greased small molds for 8-10 minutes or in a large mold for 20 minutes.

Serving suggestions

  1. Serve with grated young coconut for enhanced flavor.
