Beet Salad with Parsley and Walnuts

Ingredients

  • 2 beets
  • Half bunch parsley
  • 1 clove garlic, grated
  • 2 tablespoons vinegar
  • 3 tablespoons olive oil
  • A pinch of sugar
  • Juice of half a lemon
  • Salt
  • Walnuts (optional)

Preparation

  1. Boil the beets.

  2. Chop the parsley and place it in a bowl.

  3. Add the grated garlic, 2 tablespoons vinegar, 3 tablespoons olive oil, a pinch of sugar, juice of half a lemon, and salt to the bowl; mix well.

  4. Chop the boiled beets and add them to the mixture; stir to combine.

  5. Optionally, top with walnuts and serve.
