Beet Salad with Parsley and Walnuts
Ingredients
- 2 beets
- Half bunch parsley
- 1 clove garlic, grated
- 2 tablespoons vinegar
- 3 tablespoons olive oil
- A pinch of sugar
- Juice of half a lemon
- Salt
- Walnuts (optional)
Preparation
Boil the beets.
Chop the parsley and place it in a bowl.
Add the grated garlic, 2 tablespoons vinegar, 3 tablespoons olive oil, a pinch of sugar, juice of half a lemon, and salt to the bowl; mix well.
Chop the boiled beets and add them to the mixture; stir to combine.
Optionally, top with walnuts and serve.
