Brazilian Coconut Chicken with Mango Chili Lime Rice

Ingredients

  • 2 pouches of merchantgourmet mango chilli & lime rice
  • 4 chicken thighs skinless, or chicken breast
  • 1 red onion, finely chopped
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 green and red chilli, finely chopped
  • 1 tin of coconut milk
  • 2 red peppers, roughly chopped
  • 1 tablespoon macadamia oil

Preparation

  1. Sauté the onions until soft, add the peppers and cook for a few minutes.

  2. Add the garlic, chillies, chicken, paprika and cayenne pepper.

  3. Add the coconut milk and cover, cook gently for 45 minutes.

  4. Reheat the rice pouch, as per instruction on the packet.

  5. Serve and enjoy
