Brazilian Shredded Meat Croquettes

Ingredients

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 1 clove garlic, chopped
  • 1 tomato, diced
  • 2 tablespoons chopped parsley
  • 500 grams shredded roasted meat
  • 1 tablespoon wheat flour
  • Salt and pepper to taste
  • 1/3 cup water

Breading

  • Egg
  • Breadcrumbs

Preparation

  1. Heat the olive oil in a skillet over medium heat.

  2. Add the chopped onion and garlic; sauté until softened.

  3. Add the diced tomato and chopped parsley; cook for a few minutes.

  4. Stir in the shredded roasted meat, wheat flour, salt, pepper, and water; cook until the mixture thickens.

  5. Remove from heat and allow the mixture to cool.

  6. Form the mixture into croquette shapes.

  7. Dip each croquette in beaten egg, then coat with breadcrumbs.

  8. Fry in hot oil until golden brown and crispy.

  9. Drain on paper towels and serve warm.
