Crispy Brazilian Risoles with Savory Fillings
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tablespoons margarine
- 3 cups milk
- 1/2 vegetable or chicken bouillon cube
- Salt to taste
Breading
- 2 eggs
- 4 tablespoons water
- Breadcrumbs (for coating)
Preparation
Sift the flour and cornstarch twice and set aside
Place the milk, margarine, and bouillon cube in a saucepan and bring to a boil. When boiling, add the flour, turn off the heat, and stir well
Return the mixture to the heat and cook for about 4 minutes, stirring constantly, to cook out the raw flour taste
The ideal consistency is when the dough pulls away from the bottom of the pan
Transfer the dough to a work surface and knead until cooled (do not add flour), using a spatula or your hands
When the dough is cool, roll it out and use a round cutter to shape the risoles
Fill with your preferred filling, shape the risoles, and then coat each by dipping first in the beaten egg mixture and then in breadcrumbs
Fry in hot oil
