Easy Brazilian Chicken Croquettes

Ingredients

  • 2 cups water (can be from chicken cooking)
  • 1 cup milk
  • 1 tablespoon margarine
  • 1 chicken bouillon cube
  • 3 cups all-purpose flour
  • 1 medium potato, cooked with skin, peeled and mashed (optional)
  • salt to taste

Preparation

  1. Place water, milk, margarine, chicken bouillon cube, potato (if using), and salt in a saucepan and mix until boiling

  2. Reduce heat and add flour all at once

  3. Stir until the dough is smooth and homogeneous and pulls away from the bottom of the pan

  4. Transfer to a surface, stir the dough slightly and knead until smooth

  5. Fill with your preferred filling

  6. Dip in a mixture of half water and half milk, then coat in breadcrumbs, and fry until golden

Notes

  1. The water can be from cooking chicken for extra flavor

  2. Potato is optional
