Easy Tasty Brazilian Chicken Croquettes
Ingredients
Broth
- 1 large chicken breast, cut into medium pieces
- 2 chicken bouillon cubes
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 tablespoon oil
Dough
- 300g potatoes, peeled
- 100g margarine
- 700ml chicken cooking broth
- 1 chicken bouillon cube
- 450g all-purpose flour
Filling
- 1 cooked chicken breast, shredded
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- dried parsley, to taste
- Sazon seasoning (or similar), to taste
- annatto (optional)
Preparation
SautΓ© garlic and onion in oil
Add chicken and sautΓ© briefly
Add chicken bouillon cubes and about 1 liter of water
Cover the pressure cooker and cook until the chicken can be shredded
Remove the chicken and set aside
Strain the remaining broth and leave it in the pot
Place peeled potatoes in the strained broth and cook until tender
Remove the potatoes, measure the broth, and if needed, top up with water to maintain the volume
Mash the cooked potatoes
Combine mashed potatoes, broth, margarine, and chicken bouillon cube in a pot; bring to a boil
When the mixture boils, add the flour all at once
Stir quickly with a wooden spoon, turning to all sides, until the mixture forms a ball that pulls away from the pot
Cook for about two minutes to cook the flour
Transfer the dough to a bowl, cover with a kitchen towel, and let cool completely
Meanwhile, sautΓ© garlic and onion in olive oil until wilted
Add shredded chicken, Sazon seasoning, and dried parsley; sautΓ© well until the filling is very dry
Let the filling cool
Shape the cooled dough into small balls, make an indentation, fill with the chicken filling, and reshape into drumstick forms
Dip the shaped coxinhas in beaten eggs and then in breadcrumbs
Deep-fry in hot oil until golden brown
