Buffalo Ranch Chicken Meatball "Sandwich" Bites

Ingredients

  • 1 lb. ground chicken (preferably organic)
  • 1 egg
  • 2 tbsp. avocado oil (or olive oil)
  • 2 tbsp. nutritional yeast
  • 1/3 cup oat flour (made by blending oats)
  • Buffalo sauce/hot sauce (about 2 tsp.)
  • Salt and pepper
  • Optional: @realcoconutkitchen 'nutty parmesan crumble' (flax, nutritional yeast, & pink salt) for extra flavor
  • Optional toppings: @primalkitchenfoods buffalo sauce and @primalkitchenfoods ranch
  • @therealcoconut tortillas (for serving)

Preparation

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the ground chicken, egg, avocado oil, nutritional yeast, hot sauce, oat flour, and optional nutty parmesan crumble. Season with salt and pepper.

  3. Roll the mixture into 38-40 meatballs or use a mini cookie scoop for uniform size.

  4. Place the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for 35-40 minutes or until fully cooked and browned.

  5. While the meatballs are baking, you can prepare the tortillas by crisping them on the stove or follow the instructions on the package.

  6. Once the meatballs are done, toss some of them in buffalo sauce and some in ranch dressing, if desired.

  7. Serve the buffalo ranch chicken meatballs with the crisped tortillas as little "sandwich" bites.
