Bulgur and Potato Patties

Ingredients

  • 1 cup fine bulgur
  • 1 cup hot water for soaking bulgur
  • 1 small potato
  • 1 egg
  • 1 tablespoon flour
  • Black pepper, to taste
  • Red pepper flakes, to taste
  • Cumin, to taste
  • Salt, to taste

Sauce

  • 4 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 2 cloves garlic
  • 1.5 cups water
  • Salt, to taste

Preparation

  1. Soak the bulgur in hot water for about 15-20 minutes until softened.

  2. Grate the potato and mix it with the soaked bulgur, egg, flour, and spices to form a mixture.

  3. Shape the mixture into small patties or balls.

  4. Fry the patties in a skillet with oil until golden brown on both sides.

  5. For the sauce, heat vegetable oil in a pan and sauté minced garlic until fragrant.

  6. Add tomato paste to the sauce pan and cook for a minute, then stir in water and salt, and simmer until thickened.

  7. Serve the patties with the sauce poured over them.
