Bulgur Meatballs with Tomato Sauce
Ingredients
- 2 cups fine bulgur
- 1 cup semolina
- 3 tablespoons flour
- 1 egg
- 1 tablespoon pepper paste
- 1 tablespoon tomato paste
- Salt
- Cumin
Sauce
- 1 cup olive oil
- 5-6 cloves garlic
- 2 tablespoons pepper paste
- 4 grated tomatoes
Garnish
- 1 bunch parsley
Boiling liquid
- 2 liters water
- 1 teaspoon citric acid
- Salt
Preparation
Knead all köfte ingredients with lukewarm water to a dough consistency and shape into chickpea-sized balls.
Press each ball with a finger to create a dent and place them on a floured tray.
For the sauce, heat oil in a pan, sauté crushed garlic lightly, add pepper paste and grated tomatoes, and cook until it thickens to sauce consistency.
Boil water with citric acid and salt, add the köfte in batches, cook for 5 minutes, and remove with a skimmer to a serving plate.
Pour the prepared sauce over the köfte and garnish with finely chopped parsley.
