Delicious Summer Zucchini Loaf

Ingredients

  • 1 and 3/4 cups of all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • A few cracks of sea salt
  • 1 and 1/2 tsp ground cinnamon
  • 1/4 tsp of ground nutmeg
  • 1/2 cup melted coconut oil
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 2 eggs
  • 1/2 cup of Greek yogurt
  • 2 tsp of pure vanilla extract
  • 1 and 1/2 cups of shredded zucchini

Preparation

  1. In a bowl add flour, baking powder, baking soda, sea salt, ground cinnamon, ground nutmeg and mix.

  2. In a separate bowl add sugars, eggs, melted coconut oil, Greek yogurt, vanilla extract and shredded zucchini.

  3. Pour the wet ingredients into the dry ingredients bowl and mix.

  4. Pour into a loaf pan.

  5. Bake at 350 for 40-50 minutes or whenever a toothpick cleanly comes out of the middle without any raw batter on it.
