Exotic Mango Amba Sauce

Ingredients

  • 1 mango
  • 1/2 lemon
  • 1 tablespoon salt
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 1 chili
  • 1/2 teaspoon mustard seeds
  • 1 teaspoon turmeric
  • 1/2 teaspoon fenugreek leaves
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander seeds
  • 1 tablespoon brown sugar
  • 110ml water
  • 2 tablespoons apple cider vinegar

Preparation

  1. Finely chop the garlic and chili.

  2. Peel and chop the mango into pieces.

  3. Place the mango pieces in a bowl and mix in the salt.

  4. In a pot with a lid, heat olive oil over medium heat.

  5. Add the chopped garlic and chili to the pot.

  6. Cook until the garlic starts changing color.

  7. Add mustard seeds, turmeric, fenugreek leaves, ground cumin, and ground coriander seeds to the pot. Mix well for about a minute.

  8. Pour in water, add brown sugar and apple cider vinegar.

  9. Add the mango and salt mixture to the pot. Mix well.

  10. Allow the mixture to simmer for about 12 minutes with the lid on.

  11. Squeeze the juice from half a lemon into the pot.

  12. Puree the mixture until smooth.

  13. The sauce can be stored in the fridge for up to five days.
