Fern Shoot and Clam Salad
Ingredients
- 1 bunch fern shoots, blanched
- A bowl of bean sprouts, blanched
- Pre-boiled clams
- 5 or 6 small shallots
- 2 tablespoons toasted coconut
- Bird's eye chilies
- Shrimp paste
- Salt
- Coconut milk
Preparation
Pound or blend the bird's eye chilies with shrimp paste.
Mix the chili paste, toasted coconut, and shallots in a large bowl.
Add the clams and mix well, then add a little salt.
Add the blanched fern shoots and bean sprouts.
Mix evenly and add about 2-3 tablespoons of coconut milk.
