Fluffiest Coffeehouse-Style Omelette
Ingredients
- 3 tomatoes
- 1/2 teaspoon tomato paste
- Animal fat, butter, or sunflower oil
- 1 small grated onion
- Turmeric
- Salt and black pepper
- 4 eggs
- Lighvan cheese or white cheese
Preparation
Remove the bottom of the tomatoes and peel them.
Grate the onion if not already done.
Heat the oil in a skillet over medium heat.
Sauté the grated onion with turmeric, salt, and black pepper until softened.
Add the peeled and chopped tomatoes and tomato paste.
Cook the mixture covered on low heat to make the sauce.
Crack the eggs into the sauce without mixing the yolks and cook until set.
Add the cheese and serve immediately.
Tips
Make the omelette sauce on low heat with the lid on for best results.
Do not mix the egg yolks to maintain the fluffy texture.
Try Lighvan cheese in your omelette; you might like it.
