Fried Cauliflower with Herb Coating

Ingredients

  • 1 large head cauliflower, cut into small florets
  • 2 tablespoons lemon juice
  • 1 teaspoon salt

Coating mixture

  • 3 large eggs
  • 1 cup flour
  • 3 tablespoons water
  • 1/2 teaspoon cumin
  • 2 tablespoons finely chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika or chili

For frying

  • Corn oil, as needed

Preparation

  1. In a deep pot, place a generous amount of water and set it over medium heat to boil vigorously.

  2. Add lemon juice and salt.

  3. Add the cauliflower florets and cook for 10 minutes or until tender.

  4. Drain the cauliflower florets and let them drain completely.

  5. In a deep bowl, place the eggs, flour, water, cumin, parsley, salt, pepper, and paprika, and mix with a hand whisk until smooth.

  6. In a deep skillet, add oil to a depth of about 2 inches and heat over medium heat until hot.

  7. Dip each cauliflower floret in the coating mixture to coat completely and fry immediately in the hot oil, flipping until golden brown.

  8. Drain the fried cauliflower on kitchen paper and repeat with the remaining florets.

Serving suggestions

  1. Serve the fried cauliflower hot with tarator sauce and Arabic bread.
