Fried Eggs with Veggies and Sweet Potato Fries

Ingredients

  • 2 eggs
  • ghee
  • red pepper flakes
  • sweet potatoes
  • 1/2 avocado
  • tomatoes
  • mushrooms

Preparation

  1. Roast sweet potato fries at 400°F for 20 minutes on each side.

  2. Sauté mushrooms.

  3. Fry 2 eggs in ghee.

  4. Top the eggs with red pepper flakes.

  5. Serve with 1/2 avocado and tomatoes.
