Mexican Cochinita Pibil Pork Sandwich
Ingredients
- 1 kg pork shoulder or butt
- Juice of 20 oranges
- 60 g annatto paste
- 20 g ground cumin
- 20 g oregano
- 20 g paprika
- 5 g black pepper
- 20 g salt
- 80 ml vegetable oil
- 12 garlic cloves
- 1/2 onion
- 1 chili without seeds
- Handful of cilantro
- 200 ml orange juice
- Banana leaves
Spices
- Cinnamon
- Cloves
- Star anise
- Allspice
- Coriander seeds
Sandwich components
- Sourdough bread
- Melting cheese
- Cooking broth
- Onion, cilantro, lime for garnish
Preparation
Combine all marinade ingredients including spices and orange juices
Marinate the pork for several hours or overnight
Wrap the marinated pork in banana leaves
Slow-cook the pork until tender, such as in an oven or smoker
Shred the cooked pork and mix with some cooking broth if needed
Assemble the sandwich by placing shredded pork on sourdough bread with melting cheese and garnishes like onion, cilantro, and lime
