Authentic Tacos Al Pastor with Grilled Pineapple

Ingredients

  • 3 dried Guajillo chiles with the membranes and seeds removed
  • 1 dried pasilla chile with the membranes and seeds removed
  • 1/2 large white onion, chopped
  • 3 large cloves of garlic, peeled
  • 1 orange, juiced
  • 1/2 cup pineapple juice
  • 2 teaspoons salt
  • 1 1/2 ounces ground annatto (achiote molido)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 3 pounds pork shoulder sliced into 1/4 inch thick slices
  • 5-6 pineapple slices, canned or fresh, drained
  • Corn or flour tortillas

Optional toppings

  • chopped cilantro
  • finely diced onion
  • lime juice

Preparation

  1. Blend chiles, onion, garlic, orange juice, pineapple juice, salt, annatto, oregano, cinnamon, cumin, black pepper, and cloves until smooth

  2. Marinate pork slices in the mixture for several hours

  3. Preheat grill or skillet over medium-high heat

  4. Cook marinated pork until done and browned on edges

  5. Grill pineapple slices until caramelized

  6. Warm tortillas

  7. Assemble tacos with pork, pineapple, and optional toppings
