Moringa Smoothie Bowl with Homemade Granola
Ingredients
Granola
- 1 cup of cashews
- 1 cup coconut flakes
- 1 cup rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup dry cranberries
- 1/3 cup water
- 1/3 cup maple syrup
- 2 tablespoons melted coconut oil
Smoothie bowl
- 3 frozen bananas
- 1/4 cup oat milk
- 1/4 cup granola
- 1 tablespoon moringa powder
Preparation
Preheat oven to 160C and line a baking tray with parchment paper.
Place cashews and coconut flakes in a food processor and pulse a few times.
In a saucepan combine water, maple syrup and oil over medium heat and bring to a boil, simmer for a couple of minutes and set aside.
In a mixing bowl combine oats, cashews, coconut flakes, pumpkin seeds and cranberries.
Pour in the maple syrup and mix until well combined.
Transfer the mixture into the prepared baking tray.
Bake for 40 minutes stirring every 7 minutes until golden brown.
Place bananas, milk, granola and powder into a blender.
Process until creamy and smooth.
Serve topped with additional granola, fresh fruit and berries. Enjoy right away.
