Oil-Free and Sugar-Free Apple Granola
Ingredients
- 6 Medjool dates, pitted
- 100 ml water
- 2 tablespoons almond paste or other nut paste
- 1 teaspoon cinnamon or speculaas spices
- Pinch of salt
- 250 grams oat flakes
- 80 grams finely chopped seeds, nuts, and pits of choice (e.g., pumpkin seeds and mixed nuts)
- 1 grated apple
- 1 teaspoon vanilla extract
Preparation
Preheat the oven to 170 degrees Celsius and line a baking sheet with parchment paper.
Place the dates in a bowl, add boiling water, and let them stand for 5 minutes until soft.
In a blender, combine the dates, 100 ml water, almond paste, cinnamon, and a pinch of salt, and blend until smooth.
In a large bowl, mix the oat flakes, chopped seeds, nuts, and grated apple, then add the date mixture and vanilla extract, and stir well.
Spread the mixture evenly on the baking sheet and bake for 20 minutes until crispy and golden brown, stirring halfway to prevent burning.
Allow the granola to cool for 10-15 minutes for extra crunch and serve with your favorite plant-based yogurt or milk.
