Smashed Fried Chicken with Sambal Matah

Ingredients

  • 3 pieces fried flour-coated chicken

Sambal matah

  • 10 bird's eye chilies
  • 5 shallots
  • 2 garlic cloves
  • 1 lemongrass stalk
  • salt to taste
  • sugar to taste
  • seasoning to taste
  • a little cooking oil
  • lime juice to taste
  • kaffir lime leaves (optional)

Preparation

  1. Slice the bird's eye chilies, shallots, garlic, and lemongrass thinly.

  2. Mix all sambal matah ingredients except lime juice in one container.

  3. Heat about 2/3 tablespoon of oil until very hot.

  4. Pour the hot oil into the container with the sambal mixture; it will sizzle.

  5. Stir until well combined, then drizzle with lime juice and adjust seasoning.

  6. Prepare a mortar and pestle, smash each piece of fried chicken, then top with the sambal matah.

  7. Serve with warm rice.

Tips

  1. Use oil that has been used for frying salted fish for better flavor.
