Soft Pandan Sponge Cake
Ingredients
- 5 eggs
- 120 grams sugar
- 150 grams self-raising flour
- 50 ml cooking oil
- 1 tablespoon ovalette
- Green food coloring (optional)
- Pandan essence (optional)
Preparation
Put all ingredients except cooking oil into a mixing bowl. If desired, add pandan flavoring at this stage.
Mix at low speed until combined, then increase to high speed until the mixture forms stiff peaks.
Add the cooking oil and fold until evenly incorporated.
Pour the batter into a 9-inch pan lined with parchment paper.
Bake at 170°C for 40 minutes or until golden brown.
Cool the cake before removing it from the pan.
Tips
The cake can be decorated with buttercream and whipped cream toppings.
