Stuffed Sweet Potatoes with Roasted Veggies and Sauce

Ingredients

  • Sweet potato
  • Chickpeas
  • Cauliflower
  • Spinach
  • Avocado
  • Pomegranate
  • Coconut
  • Tahini

Preparation

  1. Preheat oven to 400°F and bake sweet potatoes until tender, about 45-60 minutes

  2. Roast chickpeas and cauliflower in the oven until golden and crispy, approximately 20-30 minutes

  3. Prepare coconut-tahini sauce by mixing coconut milk or oil with tahini and any desired seasonings

  4. Once cooked, slice open the sweet potatoes and stuff with roasted chickpeas, cauliflower, fresh spinach, avocado, and pomegranate seeds

  5. Drizzle with the coconut-tahini sauce and serve immediately
