Swedish Tunnbrรถd Roll with Mashed Potatoes and Shrimp Salad

Ingredients

Mashed potatoes

  • 1 kg firm potatoes
  • 3 tablespoons butter
  • 2 deciliters whipping cream
  • 1 teaspoon grated nutmeg
  • 2 teaspoons salt
  • 2 teaspoons white pepper

Shrimp salad

  • 200 grams peeled shrimp
  • 3 heaping tablespoons mayonnaise
  • 2 tablespoons finely chopped dill
  • 1/2 red onion, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Preparation

Mashed potatoes

  1. Peel and boil potatoes until soft, then drain and let steam off

  2. Heat butter and whipping cream in the microwave for 2 minutes

  3. Press potatoes through a potato ricer and pour over the cream-butter mixture, nutmeg, salt, and pepper

  4. Whisk with a balloon whisk until fluffy

Shrimp salad

  1. Mix all ingredients together and let sit in the refrigerator for 20-30 minutes

Assembly

  1. Assemble the tunnbrรถd roll by spreading mashed potatoes and shrimp salad on thin bread, then add salad, pickled red onion, roasted onion, mustard, ketchup, and other desired toppings
