Swedish Tunnbrรถd Roll with Mashed Potatoes and Shrimp Salad
Ingredients
Mashed potatoes
- 1 kg firm potatoes
- 3 tablespoons butter
- 2 deciliters whipping cream
- 1 teaspoon grated nutmeg
- 2 teaspoons salt
- 2 teaspoons white pepper
Shrimp salad
- 200 grams peeled shrimp
- 3 heaping tablespoons mayonnaise
- 2 tablespoons finely chopped dill
- 1/2 red onion, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
Preparation
Mashed potatoes
Peel and boil potatoes until soft, then drain and let steam off
Heat butter and whipping cream in the microwave for 2 minutes
Press potatoes through a potato ricer and pour over the cream-butter mixture, nutmeg, salt, and pepper
Whisk with a balloon whisk until fluffy
Shrimp salad
Mix all ingredients together and let sit in the refrigerator for 20-30 minutes
Assembly
Assemble the tunnbrรถd roll by spreading mashed potatoes and shrimp salad on thin bread, then add salad, pickled red onion, roasted onion, mustard, ketchup, and other desired toppings
