Sweet and Sour Pineapple Cauliflower
Ingredients
- 1 medium cauliflower head
- 3/4 cup white flour
- 1/2 cup cornstarch
- 1 cup + 4 tbsp water
- 1/2 cup pineapple chunks
- 1/2 green bell pepper
- 1/2 red bell pepper
- 2 tbsp oil
- Enough vegetable oil for deep frying
Sauce
- 1/2 cup ketchup
- 2 tbsp tamari or soy sauce
- 6 tbsp rice vinegar
- 4 tbsp sugar
Preparation
Mix the sauce ingredients together in a bowl and set aside.
Soak the cauliflower florets in salt water for 15 minutes.
In a large bowl, mix together flour, cornstarch, and water to make a batter.
Dip the floret pieces into the batter and deep fry until crispy, ensuring the oil is not too hot, for about 6-7 minutes.
Once all pieces are crisp, set them aside.
In a pan, heat 2 tablespoons of oil over medium-high heat.
Stir in the bell peppers and pineapples for 1 minute.
Stir in the sauce mixture and turn the heat to high.
Stir until bubbles begin to form and the sauce is reduced and sticky.
Mix in the florets until they are all coated with sauce, doing this quickly to maintain crispness.
Tips
For extra crispness, spread the cauliflower pieces on a baking pan lined with parchment paper and broil in the oven for 5 minutes, watching carefully to avoid burning.
This dish is excellent with steamed jasmine rice.
