Tuna and Herb Flatbread

Ingredients

  • 1 can tuna in its own juice
  • 2 eggs
  • 100 ml kefir
  • 130 g flour (rice flour used)
  • any greens (green onion, dill)
  • salt and pepper to taste
  • 5-6 g baking powder

Preparation

  1. Mix all ingredients to form a batter with the consistency of thick sour cream, adjusting with more flour if too liquid or more kefir if too thick.

  2. Heat a skillet over medium heat.

  3. Fry the batter, first covered with a lid, then flip and cook without the lid for a crispy crust.

  4. Serve immediately while hot.
