Veggie Breakfast with Roasted Tomatoes and Fried Eggs

Ingredients

  • Hash browns
  • Vegetarian sausages
  • Eggs
  • Ciabatta bread
  • Mushrooms
  • Vegan black pudding
  • Tomato ketchup
  • Mustard
  • Olive oil

Preparation

  1. Preheat the oven to a suitable temperature for roasting.

  2. Roast the tomatoes, hash browns, and vegetarian sausages in the oven until cooked.

  3. Slice the mushrooms and vegan black pudding.

  4. Fry the sliced mushrooms and vegan black pudding together in a pan until done.

  5. Brush the ciabatta bread with olive oil and pan-fry until golden brown.

  6. Fry the eggs in a separate pan to your preferred doneness.

  7. Arrange all components on a plate and serve with tomato ketchup and mustard.
