No-Bake Pecan Caramel Cookies

Ingredients

Base

  • 100g oats
  • 40g vanilla protein powder
  • 1g or 1/4 tsp cinnamon
  • 20g coconut oil
  • 40g maple syrup
  • 40g soy milk

Filling

  • 75g macadamia butter
  • 15g maple syrup
  • 40g pecans

Topping

  • white chocolate for drizzling

Preparation

  1. Combine base ingredients in a blender and mix until smooth and sticky.

  2. Roll into balls using hands and flatten, then press thumb into the middle of each to make space for the filling.

  3. Combine filling mix and spoon into each cookie. You can top with extra pecans. Freeze for 1 hour before drizzling with melted white chocolate.

Tips

  1. Cinnamon is optional and adds a great flavor.

  2. If you don’t want to use protein powder, add an extra 40g of oats to the base.

  3. Makes 6 cookies.
