No Bake Pecan Oat Cups
Ingredients
Base layer
- 1 cup pecans
- 1 tbsp maple syrup
- 1 tbsp melted coconut oil
Middle layer
- 1/2 cup FODMAP-friendly nut butter
- pinch of sea salt
Topping
- roasted oats
Preparation
Line a muffin tin with oil or muffin cups.
Combine base layer ingredients in a blender or food processor and pulse until pecans make a crumble.
Gently press pecan mixture into each muffin tin.
Evenly pour nut butter over top of the pecan layer.
Sprinkle on top some roasted oats.
Place the tin in the freezer until solid.
Notes
Pecans are rich in energy, nutrients, antioxidants, and monounsaturated fats that help reduce bad cholesterol and increase good cholesterol.
