Corn Flour Chicken Soup
Ingredients
- 3 tablespoons corn flour
- 300 grams cooked chicken
- 2 medium potatoes
- 1 onion
- 4 cloves garlic
- 1 grated carrot
- 1 tablespoon butter
- 4 tablespoons olive oil
- 4 cups chicken broth
- 2 cups hot water
- Salt and black pepper
Preparation
Put butter and olive oil in a pot, add corn flour, and roast for about 3 minutes.
Add coarsely chopped onion, potatoes, grated carrot, and garlic, and continue roasting for about 5 minutes.
Add chicken broth and water, then salt and black pepper, and cook for 20-25 minutes until vegetables are soft.
Blend with a blender until smooth.
Add shredded chicken and cook for another 7-8 minutes on low heat, stirring.
The soup is ready.
Tips
Serve with parsley sprinkled on top.
Optionally, add red pepper flakes.
