Garlicky Prawn Gambas with Wine Sauce
Ingredients
- A mix of olive oil and butter
- Loads of garlic
- Parsley
- Capers
- A touch of chili
- Prawns
- A big splash of wine
- A splash of water
- A small blob of butter
- A sprinkle of salt and pepper
Preparation
Heat a mix of olive oil and butter in a pan.
Add garlic, parsley, capers, and a touch of chili.
Add the prawns and sauté for a couple of minutes.
Pour in a big splash of wine and optionally flambé if desired.
Add a splash of water, a small blob of butter, and a sprinkle of salt and pepper, then heat through.
Serve with crispy sourdough.
Tips
Use larger prawns with head and tail on if available for better flavor.
