Refreshing Vegan Cabbage Slaw with Mint and Cashews

Ingredients

  • One small purple cabbage
  • 3 tablespoons veganaise
  • 1 teaspoon tahini
  • Juice of two lemons
  • Salt and pepper
  • 1 tablespoon hot sauce (optional)
  • Fresh mint
  • Roasted cashews

Preparation

  1. Cut the purple cabbage into chunks and use a food processor to shred it.

  2. Mix the dressing using 3 tablespoons veganaise, 1 teaspoon tahini, juice of two lemons, salt, pepper, and 1 tablespoon hot sauce if desired.

  3. Incorporate plenty of fresh mint and roasted cashews into the slaw.
