Refreshing Vegan Cabbage Slaw with Mint and Cashews
Ingredients
- One small purple cabbage
- 3 tablespoons veganaise
- 1 teaspoon tahini
- Juice of two lemons
- Salt and pepper
- 1 tablespoon hot sauce (optional)
- Fresh mint
- Roasted cashews
Preparation
Cut the purple cabbage into chunks and use a food processor to shred it.
Mix the dressing using 3 tablespoons veganaise, 1 teaspoon tahini, juice of two lemons, salt, pepper, and 1 tablespoon hot sauce if desired.
Incorporate plenty of fresh mint and roasted cashews into the slaw.
