Brazilian Cassava Cake with Coconut Milk

Ingredients

  • 2 cups mashed cassava (without milk)
  • 3 eggs
  • 1 tablespoon butter
  • 1 cup sugar
  • 1 can coconut milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder

Preparation

  1. Blend sugar, eggs, butter, coconut milk, and flour in a blender. Gradually add the mashed cassava

  2. Blend in the baking powder just to mix

  3. Pour the batter into a greased and floured pan

  4. Bake in a preheated oven at 180Β°C for 25 minutes or until golden brown

  5. Unmold when warm and let cool completely

  6. Serve with caramel sauce
