Cream Filled Summer Berries Flan
Ingredients
- 1 flan case (available from many supermarkets)
- fruit juice, cordial or jelly solution
- 1 pot double cream (anywhere between 250 - 300ml)
- 1/2 can of condensed milk (approx 200ml)
- fruits of your choice (blueberries, strawberries, raspberries and grapes all work well)
- mint leaves (optional)
- icing sugar (for dusting)
Preparation
Prepare the flan case by brushing with some fruit juice to soften the base and prevent it from tasting dry, or alternatively dissolve some jelly crystals in boiling water and brush the case with this solution
Whip the double cream until soft peaks form, then add the condensed milk and whip again until combined, the mixture will be runny but it sets once poured onto the flan, spread it out evenly
Top with fruits of your choice, add some fresh mint leaves and dust with icing sugar, chill until time to serve and enjoy
Tips
Brushing the flan with fruit juice or cordial helps soften the sponge and improves flavor, but avoid pineapple as it may cause the cream to sour
Face strawberries downward when adding them to prevent the icing sugar from dissolving
This dessert is flexible and can be made with any fresh fruits or juice alternatives for best results
