Indonesian Fried Beef Bacem

Ingredients

  • 500 grams beef
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 3 inches galangal
  • 1 tablespoon tamarind water
  • 1 liter coconut water
  • 2-3 tablespoons palm sugar
  • Salt to taste

Ground spices

  • 8 shallots
  • 4 cloves garlic
  • 1 tablespoon coriander seeds
  • 3 candlenuts

Preparation

  1. Cut the beef as desired and mix with the ground spices and other ingredients.

  2. Cook over low heat until the beef is very tender and the liquid is gone. Optionally, use a pressure cooker: cook for 20 minutes after it starts hissing, then remove.

  3. Continue cooking on the stove over low heat until the liquid reduces and is absorbed.

  4. Remove from heat and fry briefly in hot oil.

  5. Serve.
