Fried Beef Empal with Onion Sambal
Ingredients
- 500g beef (brisket or with tendons)
- 1 bulb garlic
Empal spice mix
- 5 cloves garlic
- 3 shallots
- 1 tablespoon coriander seeds
- 1 teaspoon ground black pepper
- 1 tablespoon tamarind water
- 2 tablespoons grated palm sugar
- Salt to taste
- Stock powder to taste
Sambal components
- 2 cloves garlic
- 20 bird's eye chilies
- Salt to taste
Preparation
Boil the beef until tender, then cut into desired pieces.
Fry the whole bulb of garlic with its skin until dry and crispy.
Grind all the empal spice mix ingredients, add a little water, and adjust the taste.
Pound or massage the sliced beef with the spice mixture.
Fry the marinated beef briefly in a little oil until browned, reserving the hot oil.
Serve the fried beef with the sambal bawang.
Sambal
Grind the sambal components: garlic, chilies, and salt.
Pour the reserved hot oil from frying the beef over the ground sambal mixture.
