Indonesian Green Chili Fried Chicken
Ingredients
- 750g chicken, cut as desired
- Sugar (to taste)
- Salt (to taste)
- Pepper (to taste)
- Mushroom stock (to taste)
Spice paste
- 3 cloves garlic
- 5 shallots
- 3 candlenuts
- 1 tablespoon coriander seeds
- 2cm piece ginger
- 3cm piece turmeric
- 3cm piece galangal
- white part of 1 small lemongrass stalk
Green chili sambal
- 1 clove garlic
- 6 shallots
- 6 large green chilies
- 20 green bird's eye chilies
- 2 green tomatoes
- 1 slice lime
- Salt (to taste)
- A pinch of mushroom stock
Preparation
Boil water and add the chicken along with the ground spice paste, sugar, salt, pepper, and mushroom stock.
Simmer the chicken until it is tender and cooked through.
Fry the chicken until golden brown and set aside.
Boil or steam the sambal ingredients until cooked.
Roughly pound the sambal ingredients, then sauté with a little oil.
Add salt, mushroom stock, and lime juice to the sambal.
Cook the sambal until it thickens, then add the fried chicken.
Stir well and serve with warm rice.
