Moist Banana Cake with Caramel Glaze

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • Bananas, as needed

Topping

  • 3/4 cup sugar
  • 1/2 cup hot water

Preparation

  1. In a saucepan, cook sugar until melted, then add hot water and stir until sugar dissolves. Cook until thickened to a syrup consistency, then remove from heat and set aside

  2. Blend eggs, sugar, oil, and milk in a blender until combined

  3. Gradually add flour and continue blending until the batter is smooth and homogeneous

  4. Add baking powder and blend just until incorporated

  5. Grease a baking pan with margarine and dust with flour

  6. Pour the caramel syrup into the prepared pan

  7. Arrange bananas lengthwise in the pan

  8. Pour the batter over the bananas

  9. Bake in a preheated oven at 180Β°C (350Β°F) for approximately 30 minutes, or until golden brown on top
