Caramel Glazed Banana Upside-Down Cake

Ingredients

Caramel glaze

  • 1 cup sugar
  • 1 cup hot water

Cake batter

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 cup warm milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Preparation

Caramel glaze

  1. In a saucepan, add sugar and cook over low heat until it begins to caramelize

  2. Stir to mix and wait until all the sugar melts

  3. Add hot water carefully (it may splatter) and simmer over low heat until the syrup thickens and any lumps dissolve

  4. Pour the caramel into a baking pan, spreading along the sides

  5. Arrange banana slices in the pan and set aside

Cake batter

  1. In a mixer, beat egg whites until stiff peaks form

  2. Add egg yolks, oil, and sugar, and beat on low speed until combined

  3. Gradually add warm milk and beat until well mixed

  4. Add flour and beat again

  5. Finally, add baking powder and beat just until combined

  6. Pour the batter over the bananas in the pan

  7. Bake in a preheated oven at 200Β°C for 40 to 50 minutes, or until a toothpick inserted comes out clean

  8. Turn off the oven, wait 10 minutes, then unmold the cake

Notes

  1. The recipe uses a 240ml cup for all measurements
