Brazilian Orange Cake with Citrus Glaze
Ingredients
- 4 eggs (whites and yolks separated)
- 240 ml fresh orange juice
- 2 cups sugar
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 cup vegetable oil
Glaze
- 240 ml orange juice
- 1 cup sugar
- 1 teaspoon all-purpose flour or cornstarch
Preparation
Beat egg whites until stiff peaks form
Add egg yolks and sugar and beat until light and creamy
Add oil, orange juice, and flour and beat for about 5 minutes
Gently fold in baking powder
Grease and flour a cake pan
Pour the batter into the prepared pan
Bake for 35 to 40 minutes at 180-210 degrees Celsius until a toothpick inserted comes out clean
Glaze
Combine the glaze ingredients in a saucepan
Cook over low heat until thickened
