Brazilian Sweet Corn Cake

Ingredients

  • 1 can sweet corn, drained
  • 1/2 cup milk
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder

Topping

  • Sugar, for sprinkling
  • Ground cinnamon, for sprinkling

Preparation

  1. Blend milk, oil, corn, sugar, and eggs in a blender until well combined

  2. Sift flour and cornstarch into a bowl

  3. Pour in the blended mixture

  4. Mix until combined

  5. Pour the batter into a greased and floured 20cm tube pan

  6. Bake in a preheated oven at 180Β°C for about 40 minutes

  7. Let cool before unmolding, then sprinkle with sugar and cinnamon
