Brazilian Sweet Corn Cake
Ingredients
- 1 can sweet corn, drained
- 1/2 cup milk
- 3/4 cup vegetable oil
- 3 eggs
- 1 1/2 cups sugar
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tablespoon baking powder
Topping
- Sugar, for sprinkling
- Ground cinnamon, for sprinkling
Preparation
Blend milk, oil, corn, sugar, and eggs in a blender until well combined
Sift flour and cornstarch into a bowl
Pour in the blended mixture
Mix until combined
Pour the batter into a greased and floured 20cm tube pan
Bake in a preheated oven at 180Β°C for about 40 minutes
Let cool before unmolding, then sprinkle with sugar and cinnamon
