No Bake Paleo Chunky Monkey Bars

Ingredients

  • 1 cup cashew butter
  • 1/2 mashed banana
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 tbsp cinnamon
  • 1/4 cup chocolate chips
  • 1/2 cup chocolate chips (for topping)
  • 2 tbsp cashew butter (for topping)

Preparation

  1. In a bowl, mix together 1 cup cashew butter, 1/2 mashed banana, 1/3 cup coconut flour, 1/4 cup maple syrup, and 1 tbsp cinnamon.

  2. Add 1/4 cup chocolate chips to the mixture and mix well.

  3. Line an 8x8 cake or brownie pan with parchment paper.

  4. Add the mixture to the prepared pan.

  5. Refrigerate for 5-10 minutes.

  6. While the mixture is refrigerating, make the chocolate layer by combining 1/2 cup chocolate chips and 2 tbsp cashew butter in a small bowl.

  7. Melt the chocolate mixture in the microwave: heat for 30 seconds, stir, and continue melting and stirring every 15 seconds until fully melted.

  8. Spread the melted chocolate over the top of the bars in the pan.

  9. Place in the freezer for 2-3 hours.

  10. Remove from freezer, slice into bars, and enjoy.

  11. Store any leftovers in the freezer.
