Protein Waffles and Red Berries for Breakfast

Ingredients

  • 2 eggs
  • 1/2 cup GF oats
  • 1/2 cup fat free Greek yoghurt
  • 1/2 cup skimmed milk
  • 1 tsp vanilla
  • 1 tbsp erythritol sweetener
  • 1/2 cup protein powder
  • 1/4 tsp baking powder

Preparation

  1. Blitz 1/2 cup GF oats in a nutribullet for 5 seconds to make flour.

  2. Mix together all the ingredients.

  3. Whisk the mixture well.

  4. Spray a little low cal oil spray onto the waffle maker.

  5. Pour the mixture into the waffle maker using a ladle, a ladle at a time.

  6. Cook for about 5 minutes until done.

  7. Serve with red berries and sprinkle with more erythritol sweetener.

  2. Consider using pure pea protein for a clean option.
