Vibrant Pink Pitaya Breakfast Pancakes
Ingredients
- 2 eggs
- 2 bananas
- 100 ml milk
- 100 g pink pitaya or 1 teaspoon powder
- 25 g protein powder
- 2 tablespoons xylitol or erythritol
- 70 g oat flakes
- 1 pinch baking powder
Preparation
Blend all ingredients in a good stand mixer until a creamy batter forms.
Cook the pancakes individually in a greased pan.
Ensure the pancakes are not too large to make flipping easy.
Top with desired toppings and serve warm.
