Vibrant Pink Pitaya Breakfast Pancakes

Ingredients

  • 2 eggs
  • 2 bananas
  • 100 ml milk
  • 100 g pink pitaya or 1 teaspoon powder
  • 25 g protein powder
  • 2 tablespoons xylitol or erythritol
  • 70 g oat flakes
  • 1 pinch baking powder

Preparation

  1. Blend all ingredients in a good stand mixer until a creamy batter forms.

  2. Cook the pancakes individually in a greased pan.

  3. Ensure the pancakes are not too large to make flipping easy.
