Healthy Spinach Banana Pancakes
Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup spinach
- 1 banana
- 1 egg
- 1/2 cup milk
- 2 tbsp oil
- 1 tsp cinnamon
- 2 tsp baking powder
Preparation
Add all of the ingredients to a blender
Blend until smooth
Heat a pan over low medium heat
Add oil
Add 1 spoonful of pancake mix
Repeat for about 3-4 mini pancakes in the pan
Cook for 2-3 minutes on each side
Remove and enjoy
Notes
These pancakes do not taste like spinach.
No added sugar, making them baby-friendly.
This recipe makes 10-12 mini pancakes and can be frozen for later use.
