Healthy Spinach Banana Pancakes

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup spinach
  • 1 banana
  • 1 egg
  • 1/2 cup milk
  • 2 tbsp oil
  • 1 tsp cinnamon
  • 2 tsp baking powder

Preparation

  1. Add all of the ingredients to a blender

  2. Blend until smooth

  3. Heat a pan over low medium heat

  4. Add oil

  5. Add 1 spoonful of pancake mix

  6. Repeat for about 3-4 mini pancakes in the pan

  7. Cook for 2-3 minutes on each side

  8. Remove and enjoy

Notes

  1. These pancakes do not taste like spinach.

  2. No added sugar, making them baby-friendly.

  3. This recipe makes 10-12 mini pancakes and can be frozen for later use.
