Vegan Apple Cinnamon Loaf

Ingredients

Small bowl

  • 1/3 cup almond milk
  • 1 tablespoon apple cider vinegar

Medium bowl

  • 1 cup oat flour
  • 1/2 cup spelt flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Large bowl

  • 1/4 cup almond butter
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 2 flax eggs (2 tablespoons ground flaxseeds mixed with 6 tablespoons water, set in fridge for 10 minutes)
  • 1 teaspoon vanilla extract
  • 2 mini apples

Preparation

  1. Make the flax egg and set it in the fridge.

  2. Mix the small bowl ingredients together and set aside.

  3. Mix the medium bowl ingredients together and set aside.

  4. Mix the large bowl ingredients together with the prepared flax eggs, excluding the apples.

  5. Add the small bowl mixture into the large bowl to complete the wet ingredients.

  6. Add the dry ingredients from the medium bowl into the wet mixture from the large bowl to complete the batter.

  7. Stir in the chopped apples, save some for the top, and add mini dark chocolate chips on top. Bake for 45 minutes at 350 degrees Fahrenheit. Cool before cutting and enjoy.
